The Chimayó chile is a 300-year-old Native American chile variety that is integral to New Mexican culture. Before being blended with Sea of Cortez sea salt, the chiles are hand-harvested, sun-dried, and ground in the historic village of Chimayó, New Mexico.
Designed in 1932 by New Mexico’s foremost architect, John Gaw Meem, the “Father of Santa Fe Style”, Los Poblanos is located on an organic farm in the heart of the Rio Grande River Valley. A model of preservation and sustainability, the farm’s vision helps shape handcrafted line of artisan products.
